Training Outline

The ServSafe® Food Protection Manager Certification Training and Exam is accredited by the American National Standards Institute (ANSI)-Conference for Food Protection (CFP). Students must complete the course and pass the exam with a minimum point score of 75%. Instruction consists of workbook reading/review, interactive presentations, video and group exercises.

The main teaching element of the ServSafe Managers Course is the 6th Edition Managers Coursebook. This comprehensive book is organized into chapters as shown on the right panel of this page. Each chapter includes a chapter review and many include quizzes to test your comprehension of the material. Prior to attending class, a copy of the official ServSafe 6th Edition coursebook will be mailed to you for home study. Students are expected to do 8-hours of home study before attending class because it will insure that you get the most benefit from the information presented during the class.

NJ State requires one Certified Food Protection Manager per location. NJ mandates that at least one person in charge in a Risk Type 3 Food Establishment shall be a certified food protection manager who has shown proficiency of required information by obtaining a food safety certificate by passing a food safety certification examination administered by an accredited certifying program recognized by the Conference for Food Protection. In addition, the state requires re-certification every 5 years. Please Note: Several counties in the State require additional or other specific requirements and you should check with your local county health department for these requirements.

The course administered by NJ Food Safe consists of 8-hours of home study and 8-hours of classroom training followed by an exam. Our courses are taught in a one-day format with the exam on the same day. We also offer scheduled re-testing and re-certification exams which are two hours in length.
